My kick-ass Blueberry Oatmeal Pancakes with Blueberry Sauce





Years ago, I got the basic recipe from Fitness Magazine. The original recipe called for some unhealthy ingredients, so I left out a few things and added some things and made it my own.

I started with a pint of fresh, organic blueberries from the farmer's market.

Put half of the blueberries, a teaspoon of water in a small sauce pan and heat on high heat. When it bubbles, turn down to simmer. Add cinnamon to taste. Let it simmer while making the pancakes.

Mix dry ingredients in a food processor (a blender works fine) until oats are finely ground.

2 cups old-fashioned oats
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 scoop of Trader Joe's Vanilla Soy Protein powder

Heat pan over medium heat and spray cooking spray.

Transfer to bowl and stir in:
small container of blueberry yogurt (I like Trader Joe's Greek Style, any berry-flavored soy yogurt or regular blueberry yogurt works great, too)
2/3 cup apple juice (Trader Joe's 100% pure apple juice is awesome!)
2 large eggs, lightly beaten
1/2 teaspoon pure vanilla extract
as many of the leftover blueberries you want

Drop batter by 1/8 cupfula onto griddle and cook for 2-4 mins. Flip, cook other side.

Throw some blueberry sauce on your pancakes and eat that shit up!
